Gluten Free Apple Cobbler

In order to honor Darla's sacrifice for Lent this year I experimented with making a gluten free dessert for Sunday potluck last night.  It was quick, easier than I thought, and delicious.  I think you will enjoy adding this gluten free tasty treat. Ingredients

  • 6 Peeled and Sliced Organic Tart Apples (I used 1 Quart and 1 Pint of Home Canned Apples)
  • 1/2 Cup Organic Sugar
  • 1 Teaspoon Cinnamon
  • 1 1/2 Cups King Arthur Gluten Free Flour
  • 1/2 Cup Organic Sugar
  • 1 1/2 Teaspoons Baking Powder
  • 1/2 Teaspoon Salt
  • 1/3 Cup Stick Butter Sliced Into Small Sections
  • 1 Large Egg
  • Optional:  Walnuts, Vanilla Ice Cream

Spray a 13 x 9 baking dish with cooking spray.  Peel and slice apples and arrange in baking dish.

Mix  1/2 cup sugar and cinnamon in a small mixing bowl.  Sprinkle on top of apples.

Mix gluten free flour, sugar, baking powder, salt, and egg in a small mixing bowl.  Add butter and mix by hand until mixture crumbles.

Sprinkle mixture on top of apples.  At this time I also sprinkled chopped walnuts on half.   Add lots of love.

Bake at 350 degrees for 45 minutes or until golden brown and apples are soft.  Serve warm with vanilla ice cream.
