Lemon Pineapple Cobbler

Let's start this recipe with stating the obvious, "It's summer!".   As summer heats up is nice to find a nice refreshing dessert that is quick, easy, and is perfect for summer gatherings.  Make this cobbler for your next meeting of friends and family.  They will love it! Lemon Pineapple Cobbler

Ingredients:

  • 1 Can Crushed Pineapple with Juice
  • 1 Lemon Cake Mix
  • 1 Brown Egg
  • 1/4 Cup Organic Sugar
  • 1 1/3 Cups Water
  • 1/3 Cup Vegetable Oil
  • 1 Teaspoon Vanilla
  • Love
  • Optional Add Ins:
  • Coconut
  • Walnuts
  • Maraschino Cherries

Preheat oven to 350 degrees. In a 13 x 9 inch cake pan spread crushed pineapple and juice evenly in the bottom of the cake pan.   Sprinkle optional items at this time . . . coconut, chopped walnuts, maraschino cherries.

Next, spread dry cake mix on top.

In a small bowl combine egg, sugar, water, oil and vanilla.  Mix until blended.    Add love.  Pour evenly over cake mix; do not stir.

Bake 40 - 45 minutes or until golden brown.  Serve warm topped with your favorite ice cream.
