Blueberry Muffins

It's that time of year again. I'm talking blueberries! I love blueberries and they are bursting with flavor and nutrients. They are packed full of vitamin C, manganese, fiber, and vitamin E. They are also very low in calories. Blueberries are also a very powerful antioxidant and neutralize free radical damage. They help improve night time vision, protect against colon and ovarian cancer, and help improve learning capacity. Find ways to incorporate blueberries into your diet. Add them to organic yogurt, cereal, fruit salad, pancakes, or just eat them by the handfuls. One of my favorite ways to enjoy blueberries is in muffins. Today I share with you one of my favorite recipes.

They are also very easy to grow. Go out and purchase a couple of blueberry bushes today. You must have a male and female plant in order to bear fruit.

Blueberry Muffins

Ingredients

  • 3/4 Cup Milk
  • 1/2 Cup Vegetable Oil
  • 1 Brown Organic Egg
  • 2 Cups Unbleached White Flour
  • 1/3 Cup Organic Sugar
  • 3 Teaspoons Baking Powder
  • 1 Teaspoon Salt
  • 1 Cup Fresh Organic Blueberries

Heat oven to 400 degrees.  Grease bottoms only of 12 medium muffin cups or line with paper baking cups.  Beat egg, milk, and oil.  Stir in flour, sugar, baking powder, salt and love all at once, just until flour is moistened.  (Batter will be lumpy.)  Fold in blueberries.  Divide batter among muffin cups.  Sprinkle with sugar if desired.  Bake until golden brown about 18 - 20 minutes.  Immediately remove from pan.
