Cinnamon Rolls with Walnuts and Raisins
I was downstairs doing laundry yesterday when my friend CJ came in and said, "I would really love to have some cinnamon rolls without all the icing." Well she told the right person and provided inspiration for today's recipe. My true passion is in baking. It is therapy for the soul. There is really something special when you can use your hands to work the dough. It makes me very happy to bake and share the end result with my family and friends.
Ingredients
- 3/4 Cup Milk
- 1/4 Cup Softened Butter
- 3 1/4 Cups King Arthur Flour
- 1 (.25 ounce) Package Instant Yeast
- 1/4 Cup Organic Sugar (Florida Crystals)
- 1/2 Teaspoon Salt
- 1/4 Cup Warm Water
- 1 Brown Egg
- 1 Cup Organic Brown Sugar
- 1 Tablespoon Ground Cinnamon
- 1/2 Cup Softened Butter
- 1/2 Cup Golden Raisins (optional)
- 1/2 Chopped Walnuts (optional)
- 1/4 Cup Mini Cinnamon Chips (optional)

Icing
- 1 Cup Powdered Sugar
- 2 Tablespoons Light Corn Syrup
- 2 or 3 Tablespoons Milk
- Love
Mix all ingredients until desired thickness is achieved. Add additional milk to reach desired thickness.
Directions
- Heat milk and butter in a small saucepan until warm. Remove from heat.
- In a large mixing bowl combine 2 1/4 cup flour, yeast, sugar and salt; mix well. Add water, egg and the milk mixture. Add the remaining flour. When the dough has just pulled together, turn it out onto a lightly floured surface and knead until smooth, about 5 minutes. (If you have a KitchenAid Mixer, mix all of the above ingredients until pulled together with the flat beater then switch to the dough hook and mix for two minutes. )
- Cover the dough with a damp cloth and let rest for 10 minutes. In a small bowl, mix together brown sugar, cinnamon, softened butter.
- Roll out dough into a 12x9 inch rectangle. Spread dough with butter, sugar mixture, and love. Sprinkle with raisins, walnuts, and cinnamon chips, if desired. Roll up dough and pinch seam to seal. Cut into 12 equal size rolls and place cut side up in a lightly greased 12x9 pan. Cover and let rise until doubled, about 30 minutes. Preheat oven to 375 degrees F
- Bake in the preheated oven for 20 minutes, or until browned. Top with icing. Serve warm.
