Breakfast Potluck 01-31-2010
We have had several requests for recipes. I decided to post recipes from our regular Sunday Potlucks. We owe the creation of this site to many Sunday potluck conversations. We look forward to each gathering and the sharing of food, conversation, and laughter. On Sunday, January 31, 2010, we had breakfast at our potluck. This week's contributors were:

- Carol - Made to Order Waffles and Bacon
I like to start any recipe with fresh ingredients. I try to use local farm markets and organic products as much as possible. This week I ventured out to the Second Street Public Market to buy ingredients for potluck. I purchased bacon and pork chops from my favorite vendor KJB Farms. KJB Farms specializes in farm raised pork, chicken, lamb, and eggs. They are located in Miami County. This is the best bacon you will ever taste. I highly recommend this vendor. Next, I was off to see Homer at the Spice Rack. Homer has a wealth of knowledge and a great selection of spices, flours, Amish cheese and butter, popcorn, etc. I purchased King Arthur Unbleached White Flour, mini cinnamon chips and golden raisins. I buy most of my staples from Homer. I visited several other vendors to pick up a few other items for the week. I will talk more about those vendors in future postings. Waffles
- 2 Eggs (I use brown eggs when in season purchased from a co-worker's farm.)
- 2 Cups King Arthur Unbleached White Flour
- 1/2 Cup Vegetable Oil
- 1 3/4 Cups Milk
- 1 Tablespoon Sugar
- 4 Teaspoons Baking Powder
- 1/2 Teaspoon Salt
- Optional Ingredients for Made to Order Waffles
- Chopped Pecans
- Cinnamon Chips
- Blueberries
- Chocolate Chips
- Golden Raisins
- Use your imagination. Many possible ingredients. I only listed my favorite.
- Real Butter
- Love
Heat waffle iron. Beat eggs with wire wisk until fluffy: beat in remaining ingredients just until smooth. Pour batter from cup onto center of hot waffle iron. Add any combination of optional ingredients at this point. Bake until steaming stops, about 5 minutes. Remove waffle carefully. Top off with real butter. As each waffle comes hot off the iron it is then topped off with each persons favorite toppings. Maple syrup, blackberries, apples that I canned in the fall, whipped cream, bananas. You name it. The possibilities are endless. The last and most important ingredient is love. "Love" is the magic ingredient and the one that makes it taste so yummy!
