Canning Series: Peach Preserves
I stopped at my favorite Amish farm market on Thursday, The Melon Farm, and was thrilled to find fresh peaches. When I think of peaches I immediately have a flash back in time to my Grandmother's large dinner table. My Grandmother always had peaches on her table along with a yellow cake with chocolate icing. I must admit that I am fond of peaches but I do not pick them up nearly enough. I planted a peach tree this year and hopefully I will be able to go out into my yard in a year or two and pick to my hearts content. Peaches are packed full of nutritional value. They are rich in Vitamin A and potassium. They make your skin look healthy and add color to your complexion. They are a great source of dietary fiber making them very good for people trying to loose weight. Being rich in Vitamin A they may help prevent cancer. Find ways to incorporate peaches into your diet.
Peach Preserves -- Makes 8 Half Pints
Ingredients:
- 4 Cups Sliced, Pitted, Peeled Fresh Organic Peaches
- 1 Package Powdered Pectin
- 2 Tablespoons Lemon Juice
- 7 Cups Organic Sugar
Combine peaches, powdered pectin and lemon juice in a large saucepot.
Bring to a boil, stirring gently.
Add sugar, stirring until dissolved.
Return to a rolling boil. (Boil that you cannot stir down.) Boil hard one minute stirring constantly. Remove from heat. Skim foam if necessary.
Remove hot jars from water bath canner. Ladle hot preserves into hot jars.
Wipe rims with damp soft cloth.
Place warmed lids on jar and adjust two piece caps.
Bring water to a full rolling boil. Process 10 minutes in a boiling water canner.
Remove jars from water bath canner with jar lifter. Let jars rest for 12 to 24 hours.
